Chicken Quesidilla

Ingredients: 

8 Small tortillas

1 c. Cheddar cheese

1 c. Monterey Jack cheese

1 can of chicken

Instructions: 

Flake the chicken and be sure to clean out the can really well and pack it out. We tried various methods, but found that placing the desired amount of cheeses and chicken and then folding the tortilla in half worked best (this way nothiing was falling out the sides onto the frying pan)You can also cook two at a time this way... really important when you have 2 very hungry children waiting.

Comments: 

Not very original, and a little heavy with the cans, but we find it's worth the extra work for the 2nd or 3rd day in on a trip when the kids are famished. You can also change up the ingredients for a vegetarian dish... (fried onions and peppers are really good)
