Curry in a Hurry

Ingredients: 

2 Tbsp water

1 cup chopped Tomatoes (fresh, dehydrated, or from Can)

1/2 onion, diced

1 clove Garlic, minced

1tbsp mild curry paste

2 1/2 cups of water

1 cup dried lentils

2 carrots sliced

1/4 tsp of salt

Instructions: 

I cook some rice in an additional pot while I prepare the rest. At home, prepackage the curry paste and exact amount of lentils and tomatoes. At camp site: chop onions, tomatoes (if using fresh) garlic and carrots. saute the tomato, garlic, carrots and paste in 2 tbsp of filtered water. for 3-5 minutes, add 2 1/2 cups of filtered water lentils, and salt. cover and simmer for 20 minutes.

Comments: 

serve with rice and bannok. VERY filling and full of protein.
