Garlic Clam Linguini

Ingredients: 

4 cans minced clams

1 pound Montery Jack cheese

1 tbsp dried parsley

1/4 olive oil

2 pound linguini

1/8 pound margarine or olive oil

4 cloves fresh garlic or garlic flakes

basil

small onion

Instructions: 

Dice onion, garlic, and basil and saute in olive oil for about 2 minutes. Stir in margarine. Add minced clams (with juice). Saute for 5 minutes. Add parsley and continue to cook on low for about 5 more minutes. Meantime, prepare linguini. When the linguini is nearly done, slice the cheese and add it to the clam skillet. Cook slowly and stir vigorously unitl the cheese is melted. Drain linguini and quickly toss with the clam mixture. Sprinkle black pepper on top and serve.
