Mock Pesto Orzo Side Dish

Ingredients: 

1 1/2 cups orzo

1 1/2 c water

3tbsp margarine

1/2 cup parmesan cheese

2 1/2 tsp dried basil salt, pepper

optional:

1 tsp of mint

1/2 cup of dried mushrooms

Cooking Equipment: 

fry pan or pot

Instructions: 

saute orzo in margarine until brown. Add water and simmer covered until orzo is tender. Add more water as necessary, but remember you want the water to be absorbed. Add rest of ingredients and season with salt and pepper. If adding in the mushrooms, add them and cook with the orzo.

Yummy with most fish, especially with the mint.
