Moroccan Soy Bits with Apricot

Ingredients:
1/2 cup dried apricots
1/2 cup dried prunes
1 large onion
1 clove garlic
1 cup soya bits
2 cubes or envelopes beef bouillon
2 tbs tomato paste
1 tsp coriander
1 tsp cinnamon
3/4 tsp cumin
salt and pepper

Instructions:
Put dried apricots and prunes into 2 cups boiling water and let stand for 30 minutes Saute onion (finely chopped) with garlic in oil or butter Add soya bits, bouilon, 2 cups boiling water, tomato paste and spices Bring to boil then reduce heat and simmer until soya bits are tender Optional: thicken with 3 tbs flour mixed into 1/3 cup water

Serve on a bed of couscous The soya bits are sold under the brand name So Soya and can be found in many grocery stores. They are a good meat substitute that requires no refrigeration This recipe appeared in Barb Young's column Food for Paddlers in Nastawgan - The Quarterly Journal of the WCA and was originally submitted by Rita Ness. We tried the recipe, but found it a bit sweet for our taste.
