Spaghetti Sauce (Vegetarian)

Ingredients: 

2 medium onions (chopped)

1/4 cup chopped celery

1/4 cup finely chopped mushrooms

2 tbs minced garlic

1 small can tomato paste

2 large cans chopped tomatoes, drained

1/2 cup chopped parsley

Salt and pepper Oregano, basil, celery salt, rosemary and sage

Instructions: 

Sautee onions and mushrooms until soft Add garlic and sautee for another 3-4 minutes. Add tomatoes and other ingredients. Simmer for 3 hours. Dry on leather tray in dehydrator and remove when it reaches leather consistency. Cut into 1" squares and seal in Ziploc bag. Store in freezer until ready to use. To rehydrate, Add pieces to hot water to reach desired consistency.
