Veggie Chili

Ingredients: 

2 large onions, chopped

4 cloves garlic, chopped

1 cup of TVP (granules)(textured veg. protein)

3 cups of beans (kidney, black, navy, lentils, north etc.)

1 green pepper, chopped

2 cups corn

2 apples diced

1 can of mushroom pieces and stems

1 can tomato paste

1 large can of plum or diced tomatoes

1 tsp of worchester sauce

3tbsp soya sauce

3tbsp vinegar

2tbsp of brown sugar or molasses

3 tsp chili powder (or more to taste)

2tsp cinnamon

1tsp nutmeg

1tsp ginger

2tsp curry powder

1/2 tsp+ of red pepper flakes

2tbsp canola oil

Cooking Equipment: 

large pot at home dehydrator or oven pot at camp

Instructions: 

Saute onions, garlic, and peppers. Add TVP and 1 cup of water and stir. Add corn and apple and cook until tender. Add remainder of ingredients and simmer. Dehydrate into a leather, roll and bag. At camp, break leather into smaller pieces, and drop into 2 cups of hot water. Rehydrate adding more water as needed.

Comments: 

Yummy, and you will never miss the meat. If you really are a beef eater, then add in 2 packages of dried beef Boveril mix. I prefer the brown sugar rather than the molasses
