Zesty Cahpatis

Ingredients: 

2 cups whole wheat flour

1 c white flour

1/4 c extra flour for flouring surface

1 tbsp poppy seeds

1/4 tsp salt

1/4 tsp cumin

1/4 tsp PC 4 pepper corn steak spice

1/4 tsp thyme

1 1/4 c warm water

oil for greasing pan

Instructions: 

In a pot, mix 3 cups of flour, poppy seeds, salt, cumin, pepper and thyme. Add the warm water and stir until well mixed and water is all absorbed. Use some of the extra flour if the dough gets sticky. Wipe your hands with the xtra flour, and sprinkle a surface with the extra flour. Kneed dough for 5 min, until it becomes very pliable. Divide int 12 equal balls. Flattten and roll each on (a water bottle is a good rolling pin) until each is 8 " in diameter. Place peices of plastic between them when stacking. Cook in a lightly greased frying pan on medium heat, taking about 1 min per side (as they are thin)

Comments: 

Wrap tightly in plastic if not cooking right away. We have friends who omit the pepper and put in dill, but I have not tried it. Submitted By: cheryl
